Cheesy Potato Soup
Ingredients
- 6 medium potatoes
- 1 stick butter
- ½ cup chopped onion
- ½ cup flour
- 16 oz (1 small box) Velveeta
- ½ cup shredded colby jack cheese
- Salt
- Pepper
- Cube potatoes with or without skins, boil in a pot until tender (do not overcook), drain
- While potatoes are boiling, sauté onions in butter in another large pot
- Add flour to onions and butter and stir to thicken
- Add enough milk to make the base for the soup and heat until warm
- Add cooked potatoes
- Add cubed Velveeta and shredded cheese and heat until melted
- Salt and pepper to taste

ReplyDeleteThis is usually a stand-alone meal for us with steamed veggies or a salad, but I've also served it as a side with roast.
