"C" is for Curry Chicken Salad

This is the chicken salad recipe John and I have been living on for the past two months.  My mom made it when she was helping with Tully, and it's been a staple in our fridge since he was born.  She doesn't measure anything, so most items are "add to taste."

Curry Chicken Salad

Ingredients
  • 1 can diced pineapple
  • 1 can chicken breast
  • 2 eggs, hard-boiled and diced
  • red grapes, halved
  • celery, diced
  • walnuts, chopped
  • mayo
  • curry powder
Directions

Drain pineapple.  (Make sure you get all of the juice out by pressing pineapple in a strainer, or the chicken salad will get runny.)  Drain chicken.  Add pineapple, chicken, eggs, grapes, celery, and walnuts to a bowl.  Stir curry powder and mayo together in a separate bowl.  (The curry will stick in clumps to the other ingredients otherwise.)  Add curry/mayo mixture to bowl with chicken and stir.  Refrigerate.  Serve with crackers or as a sandwich.
